One of my favorite things is a Madeleine cookie. From my days working in a coffee shop, these little soft sponges got me through countless morning rushes.

French Madeleines with Earl Grey and Maple

Ingredients
 
 

Madeleines

  • 1 1/2 Cups All-purpose Flour
  • 1 1/2 Tsp Baking Powder
  • Pinch of Salt
  • 2 Earl Grey Tea Bags
  • Zest of 1 Orange
  • 4 Large Eggs
  • 2/3 Cup Maple Syrup
  • 1 Tsp Vanilla Extract
  • 1 1/2 Sticks Unsalted Butter melted and cooled about 5 minutes

Maple Earl Grey Glaze

  • 1 Cup Powdered Sugar
  • 2 Tbsp Earl Grey Tea strongly brewed* and cooled
  • 1 Tsp Maple Syrup

Instructions
 

Madeleines

  • Preheat your oven to 375°F (190°C). Grease and flour a Madeleine pan or spray with non-stick cooking spray (but spread it evenly or it’ll pool in the center).
  • Open the tea bags and grind the tea leaves to a fine powder.
    I used a blender, but a mortar and pestle would also work.
  • Whisk together flour, baking powder, Earl Grey powder, salt, and orange zest in a medium bowl.
  • Whisk together the eggs, maple syrup, and vanilla in a large bowl until frothy.
  • Stir the flour mixture into the egg mixture until mostly incorporated. Slowly stream the butter into the batter while simultaneously folding it in with a rubber spatula until just combined. Let the batter sit for 5 minutes.
  • Fill the prepared Madeleine molds 3/4 full with the batter (about 1 Tbsp + 1 Tsp of batter per). Bake until golden brown around the edges and the centers spring back when touched—about 7-10 minutes. They burn quickly, so check them early. Let the madeleines cool in the pan for a minute, then remove them onto a cooling rack.

Maple Earl Grey Icing and Assembly

  • While the madeleines are cooling, whisk the powdered sugar, brewed tea*, and maple syrup in a small bowl.
  • Once the madeleines are mostly cooled, dip the top half of the scalloped side of each cookie into the glaze, allowing the excess to drip off. Allow the glaze to set before serving. Madeleines are best when served the same day but can be stored in an airtight container for up to 2 days. They can also be frozen for up to 1 month.

Notes

*For strongly brewed Earl Grey tea, steep one tea bag in 1/2 a cup (4oz) of boiling hot water for 5 minutes.
